How to Roast Peppers on the Barbecue

Return to Grilling 101
Place whole bell peppers directly on the grid of a natural gas barbecue.

Grill peppers over medium heat, turning occasionally until blackened on all sides, for about 15 - 20 minutes. Place hot peppers in a bowl; cover with plastic wrap. Allow peppers to steam for 5 - 10 minutes.

Peel peppers under cold running water. Remove stems and cut peppers in half. Remove seeds and ribs. Use as directed in recipe.

Cooking attire

Don't wear loose clothes while cooking. An electrical coil on the stove reaches a temperature of 800 degrees and a gas flame goes over 1,000 degrees. A dishtowel, potholder or a loose sleeve can catch fire at 400 degrees.
