How to Glaze Ham
Mimosa Ham

Approximately 30 minutes before the end of the cooking time, remove the pan from the oven. Remove drippings from the pan. Brush some of the prepared glaze over the ham. Continue cooking for 30 minutes, brushing frequently with the remaining glaze. If the glaze is not caramelizing, increase the temperature to 375ºF (190ºC). Transfer the ham to a warm platter and cover with foil. Let stand for 10 - 15 minutes before carving.

For a quick ham glaze, baste with any one of the following:
  • tart applesauce seasoned with cinnamon and brown sugar
  • maple syrup, melted crabapple jelly or lemon-lime soft drink
  • a combination of 1 cup (250 mL) packed brown sugar, 1 tsp (5 mL) dry mustard and 3 tbsp (40 mL) vinegar
  • a combination of 1/2 cup (125 mL) marmalade or apricot jam, 1/2 tsp (2 mL) dry mustard, 1/4 tsp (1 mL) ginger and 1 tbsp (15 mL) water
