On hot summer days when using the oven would make your home unbearably hot, turn your barbecue into an outdoor oven with this simple brick cooking technique.
Here we have an inexpensive patio brick, which you can use multiple times on the barbecue. Place the brick on the grill and allow the brick to heat with the barbecue. Once the barbecue is at the correct temperature, set your pan of food on the brick and close the lid.
By using the brick, you are lifting the food from the heat and allowing it to cook evenly from the bottom. When the lid is closed, the barbecue will create a convection current and cook the food evenly. When done, allow the hot brick to cool completely on the barbecue before handling it.
