ASPARAGUS PARMESAN
Asparagus Parmesan

1 tbsp (15 mL) olive oil
1 tbsp (15 mL) fresh lemon juice
1 tsp (5 mL) chopped fresh parsley
1/4 tsp (1 mL) salt
1/4 tsp (1 mL) freshly ground pepper
1 lb (0.5 kg) asparagus, trimmed
1/4 cup (50 mL) freshly grated Parmesan cheese

Whisk together oil, lemon juice, parsley, salt and pepper until blended. Steam asparagus just until tender crisp, about 4 - 5 minutes. Transfer asparagus to a plate. Drizzle with oil mixture. Sprinkle with Parmesan cheese. Serves 3 - 4.
