Cream Cheese Mousse with Minted Strawberries

1/3 cup (75 mL) water
1/4 cup (50 mL) sugar
1/2 cup (125 mL) slivered fresh mint
2 cups (500 mL) sliced strawberries
8 oz (250 g) cream cheese, softened
1/2 cup (125 mL) yogurt
2 tbsp (25 mL) icing sugar
1/2 tsp (2 mL) vanilla

To prepare syrup, combine water and sugar in a small saucepan and bring to a boil. Remove from heat; stir in mint, cover and let stand 10 minutes. Pour syrup through a fine sieve into a bowl; cool to room temperature. Stir in strawberries. Cover and refrigerate for at least 20 minutes or up to 8 hours. To prepare mousse, beat cream cheese until fluffy using medium speed of an electric mixer. Beat in yogurt, sugar and vanilla. Cover and refrigerate until serving. To serve, spoon strawberries in syrup over a dollop of mousse. Serves 4.
