FIVE-SPICE WINGS

Chinese five-spice powder is a blend of star anise, cloves, fennel seed, Chinese cinnamon and Sichuan powder. Here we combine it with soy sauce to marinate these savoury barbecued chicken wings.

FIVE-SPICE WINGS

Ingredients

  • 2 tbsp soy sauce
  • 1 1/2 tsp Chinese five-spice powder
  • 1/2 tsp salt
  • 2 cloves garlic, crushed
  • 3 lb (1.5 kg) chicken wing drumettes

Directions

  1. To prepare marinade, combine all ingredients except chicken in a heavy zip-lock plastic bag. Add chicken and squeeze bag to coat chicken with marinade. Seal bag and place on a plate. Refrigerate, turning bag occasionally, for at least 2 hours or up to 24 hours. Remove chicken from marinade; discard marinade. Place chicken on a grill topper or directly on barbecue grid. Grill chicken over low heat on natural gas barbecue, turning occasionally, until chicken is cooked through, about 30 - 35 minutes.
