GREENS WITH ASPARAGUS AND ORANGES

2 cups (500 mL) sliced asparagus (2 inch/5 cm)
1/2 cup (125 mL) mayonnaise
1/3 cup (75 mL) fresh orange juice
1/4 cup (50 mL) plain yogurt
1 tsp (5 mL) Dijon mustard
1/2 tsp (2 mL) grated orange peel
1/8 tsp (0.5 mL) salt
1/8 tsp (0.5 mL) freshly ground pepper
8 cups (2 L) torn mixed greens
1/2 cup (125 mL) thinly sliced red onion
1 can (10 oz/284 mL) mandarin oranges, drained

Cook asparagus in boiling salted water for 4 minutes; drain. Cool immediately in ice water; drain. To prepare dressing, whisk together next 7 ingredients (mayonnaise through pepper) until blended. Combine greens, onion, oranges and asparagus in a bowl. Toss with enough dressing to coat. Serve immediately. Remaining dressing may be refrigerated for up to 3 days. Stir before using. Serves 8 - 10.
