GREENS WITH LIGHT CREAMY CAESAR DRESSING

1 cup (250 mL) light mayonnaise
1/4 cup (50 mL) freshly grated Parmesan cheese
3 tbsp (40 mL) milk
1 tbsp (15 mL) lemon juice
1/2-1 tsp (2-5 mL) anchovy paste
1 clove garlic, crushed
1/4 tsp (1 mL) freshly ground pepper
Torn romaine lettuce
Croutons
Freshly grated Parmesan cheese

Combine first 7 ingredients (mayonnaise through pepper) in a blender or food processor. Serve with lettuce, croutons and additional Parmesan cheese. Dressing may be kept refrigerated for up to 48 hours. Makes 1 1/4 cups (300 mL).
