1 cup (250 mL) long grain rice
2 cups (500 mL) water
1 cup (250 mL) frozen peas
6 eggs, beaten
2 tsp (10 mL) oil
1 cup (250 mL) cubed cooked ham or smoked turkey
3 tbsp (40 mL) soy sauce
1/4 cup (50 mL) slivered almonds, toasted
Soy sauce, optional

Cook rice in water according to package directions. Stir in peas 10 minutes before rice has finished cooking. Meanwhile, in a large nonstick frypan, cook eggs in oil, stirring constantly, until eggs are thoroughly scrambled and cooked. Add rice and peas to frypan. Stir in ham and soy sauce. Cook, stirring frequently, until heated through, about 5 minutes. Sprinkle with almonds. Season to taste with additional soy sauce. Serves 4.
