POTATO AND SMOKED GOUDA SOUP

Be sure to use smoked gouda in this recipe — the smokiness of the cheese really gives the soup a unique flavour. This creamy soup is great as a first course at a fall-themed dinner party.

POTATO AND SMOKED GOUDA SOUP

Ingredients

  • 1 tbsp salted butter
  • 1 tsp canola oil
  • 1 1/2 cups chopped onions
  • 1 cup chopped celery
  • 3/4 cup chopped carrot
  • 5 cloves garlic, finely chopped
  • 5 cups cubed peeled yellow potatoes (1 inch)
  • 6 cups no-salt-added chicken broth
  • 1 cup shredded smoked Gouda cheese
  • 1/2 cup milk (2%)
  • 1 tsp salt
  • 1/2 tsp freshly ground pepper
  • 1/2 tsp turmeric
  • Toppings: Shredded smoked Gouda cheese, sliced green onion and smoked paprika*

Directions

  1. Melt butter with oil in a Dutch oven over medium heat. Add onions, celery, carrot and garlic; sauté until softened, about 5 minutes.
  2. Add potatoes and broth; stir to combine. Bring to a boil.
  3. Reduce heat and simmer, uncovered, stirring occasionally, for 30 minutes.
  4. Stir in 1 cup cheese, milk, salt, pepper and turmeric; cook, stirring, for 4 minutes. Remove from heat.
  5. Using a hand blender, purée mixture until smooth.
  6. Serve topped with toppings.
