SASKATOON AND TOMATO COMPOTE

The sweet, nutty flavour of saskatoons pairs beautifully with fresh cherry tomatoes in this sweet and savoury compote. Use it as a condiment with chicken, lamb or pork.

Yield: Makes 2 cups.

SASKATOON AND TOMATO COMPOTE

Ingredients

  • 1 cup finely chopped onion
  • 1 tbsp olive oil
  • 2 tbsp sugar
  • 1/2 tsp salt
  • 1/4 tsp freshly ground pepper
  • 1/4 cup port or dry sherry
  • 2 tbsp balsamic vinegar
  • 2 cups saskatoons
  • 1 cup halved cherry tomatoes

Directions

  1. In a medium saucepan over low heat, sauté onion in oil, stirring frequently until golden, about 10 minutes.
  2. Stir in sugar, salt and pepper; cook 2 minutes.
  3. Add port and vinegar and bring to a boil.
  4. Stir in saskatoons and tomatoes and return to a boil. Reduce heat and simmer gently 5 minutes or until slightly thickened; cool.
  5. Cover and refrigerate for up to 2 days. Serve with chicken, lamb or pork.
