QUICK BLACK BEAN SOUP

You can get this tasty black bean soup on the table in a matter of minutes. Made with chicken broth, salsa, black beans and a cheesy sour cream, this soup is a great quick and easy lunch.

Yield: Serves 4.

QUICK BLACK BEAN SOUP

Ingredients

  • 2/3 cup sour cream
  • 1/3 cup shredded cheddar cheese
  • 1/3 cup sliced green onion
  • 2 tbsp chopped fresh cilantro
  • 2 cans (19 oz / 540 mL each) black beans, rinsed and drained
  • 2 1/2 cups vegetable or chicken broth
  • 1 cup medium salsa
  • 1 tbsp chili powder
  • 1/2 tsp salt

Directions

  1. Combine sour cream, cheese, green onion and cilantro until blended; set aside.
  2. Place beans in a large saucepan; partially mash using a potato masher. Stir in broth, salsa, chili powder and salt. Bring to a boil over medium heat, stirring occasionally. Ladle into bowls and top with sour cream mixture. Serve immediately.
