SPINACH SALAD WITH ORANGES AND ALMONDS

1/4 cup (50 mL) oil
1/4 cup (50 mL) white wine vinegar
1 tsp (5 mL) sugar
1/2 tsp (2 mL) dry mustard
Dash salt and pepper
8 cups (2 L) torn spinach
3 green onions, diagonally sliced
2 oranges, peeled and sliced
1/3 cup (75 mL) toasted almonds

To prepare dressing, whisk together oil, vinegar, sugar, mustard, salt and pepper. Just before serving, combine spinach, onions, oranges and almonds; toss with dressing. Serves 8.

Cook's Note: Romaine lettuce may be substituted for spinach.
