WALDORF SALAD WITH SHRIMP

1/4 cup (50 mL) light sour cream
1/4 cup (50 mL) mayonnaise
2 tbsp (25 mL) fresh lemon juice
1 tsp (5 mL) dill weed
1/8 tsp (0.5 mL) nutmeg
6 cups (1.5 L) cubed red apples
2 cups (500 mL) sliced celery
1/4 cup (50 mL) chopped walnuts
1 3/4 cups (425 mL) frozen cooked small shrimp, thawed, rinsed and patted dry

To prepare dressing, whisk together sour cream, mayonnaise, lemon juice, dill weed and nutmeg until blended. Combine apples, celery, walnuts and shrimp in a bowl. Add dressing and toss to combine. Serve immediately. Serves 8.
