WINTER SALAD WITH CRANBERRY VINAIGRETTE

1/4 cup (50 mL) cranberry juice
1/4 cup (50 mL) rice vinegar
1 tbsp (15 mL) honey
1 tsp (5 mL) Dijon mustard
1/4 tsp (1 mL) salt
1/4 cup (50 mL) oil
1/4 cup (50 mL) chopped fresh cilantro
2 tbsp (25 mL) finely chopped green onion
8 cups (2 L) mixed baby greens
2 cups (500 mL) shredded red cabbage
1/2 cup (125 mL) thinly sliced red bell pepper
1/3 cup (75 mL) thinly sliced red onion
1/3 cup (75 mL) dried cranberries
1/3 cup (75 mL) shelled pumpkin seeds

To prepare vinaigrette, whisk together cranberry juice, vinegar, honey, mustard and salt until combined. Gradually whisk in oil until blended. Stir in cilantro and green onion. Combine remaining ingredients (greens through pumpkin seeds) in a bowl. Add vinaigrette and toss to coat. Serve immediately. Serves 10 - 12.
