ZUCCHINI AND CHEESE DROP BISCUITS
Zucchini and Cheese Drop Biscuits

2 cups (500 mL) flour
2 tsp (10 mL) baking powder
1 tsp (5 mL) sugar
1/4 tsp (1 mL) baking soda
1/4 tsp (1 mL) salt
1/8 tsp (0.5 mL) freshly ground pepper
1 cup (250 mL) shredded zucchini
1 cup (250 mL) shredded cheddar cheese
2 tbsp (25 mL) chopped green onion
1 1/4 cups (300 mL) buttermilk

Combine first 6 ingredients (flour through pepper) in a bowl. Stir in zucchini, cheese and green onion. Add buttermilk and stir just until combined. Drop 1/4 cup (50 mL) measures of dough onto a greased cookie sheet. Bake at 400ºF (200ºC) for 20 minutes or until golden. Serve warm or refrigerate for up to 24 hours. Makes 12.
