Prepare any fruit pie recipe. Place a brick directly on grid on natural gas barbecue. Place pie pan on top of brick. Bake, with lid down, over medium heat for 40 - 45 minutes or until pastry is golden and filling is bubbly.
Turn pie one quarter turn every 10 - 15 minutes to ensure even cooking.
