SLOW COOKER SCALLOPED POTATOES
Ingredients
- 1/4 cup salted butter
- 1 cup finely chopped onion
- 1/4 cup all-purpose flour
- 1 tsp salt
- 1/4 tsp dry mustard
- 1/8 tsp cayenne pepper
- Pinch freshly ground nutmeg
- 2 cups homogenized milk
- 8 cups thinly sliced peeled red potatoes
- 1/2 cup shredded cheddar cheese
- Paprika
Directions
- To prepare sauce, melt butter in a saucepan over medium heat. Add onion and sauté for 5 minutes. Stir in flour, salt, mustard, cayenne pepper and nutmeg; cook for 1 minute, stirring constantly. Gradually stir in milk; cook, stirring constantly, until thickened.
- Place potatoes in a slow cooker. Pour sauce over potatoes and gently stir to coat potatoes with sauce.
- Cover and cook on high heat setting until potatoes are tender, about 3 - 4 hours. Sprinkle with cheese and paprika. Cover and cook for 5 minutes or until cheese is melted.
