Super Greens with Blueberry Vinaigrette

Packed with herbs, dark greens and fruit, this salad is great for healthy eating. Did we mention its also super delicious?! 

Yield: Makes about 12 cups.

Super Greens with Blueberry Vinaigrette

Ingredients

  • 1 cup fresh blueberries, divided
  • 1/4 cup canola oil
  • 2 tbsp apple cider vinegar
  • 1 tsp liquid honey
  • 1/4 tsp salt
  • 1/4 tsp freshly ground pepper
  • 4 cups arugula
  • 4 cups baby kale
  • 2 cups sliced English cucumber (¼ inch)
  • 3/4 cup shredded carrot
  • 1/2 cup crumbled soft goat cheese, divided
  • 1/2 cup coarsely chopped pecans, divided
  • 1/4 cup roughly chopped basil leaves
  • 2 tbsp roughly chopped mint leaves

Directions

  1. To make dressing, combine 3/4 cup blueberries, oil, vinegar, honey, salt and pepper in a mini food processor and purée until smooth.
  2. Combine arugula, kale, cucumber, carrot, 1/4 cup cheese, 1/4 cup pecans, basil and mint in a large bowl. Drizzle with dressing and toss to combine. Top salad with remaining blueberries, cheese and pecans. Serve immediately.
