December 2014

The holiday season is fast approaching, and we’re looking forward to the time to relax with family and friends, as well as ring in the New Year. The best advice we can give you over the next month is to plan ahead and delegate, delegate, delegate. Big family dinners become more manageable and less stressful when you know what you’re making a week or two in advance, as you can make some things ahead of time and effectively delegate out dishes to others or use their help in the kitchen on the day of the big meal. If you need any tips on picking recipes for your family meal, we’re only a phone call, email or live chat away. Happy holidays from all of us here at ATCO Blue Flame Kitchen.

Ease Entertaining Stress

The best part of entertaining guests over the holidays is catching up with friends and family over food and drinks. The worst part? All the work involved in playing host to a room full of hungry people. One of the easiest ways to cope with holiday entertaining stress is to make some food ahead of time, then freeze it for use over the festive season. Some items, like our White Cheddar Potato Croquettes, can be made halfway and frozen, then popped in the oven just before the party. For more make ahead recipes, visit our Planning Ahead: Holiday Entertaining Menu Ideas page on our website.

Quick Tip: Sharpen Your Knives!

Reduce prep time and make cutting veggies and meat less of a chore by keeping your knives sharp. If you feel comfortable sharpening knives, we have two useful tutorial videos on our YouTube channel to help remove the guesswork. One is on How to Hone Your Knife, and the other on How to Sharpen Your Knife.

Chef's Choice

Chef Janice loves our warm and filling Gnocchi with Browned Butter and Sage.
“You can make it ahead of time, and it’s really fun to make,” says Janice, who also appreciates the base pasta’s versatility. “The gnocchi itself can be served with almost any kind of pasta sauce. Bolognese, Alfredo, pesto … it’s just a matter of using your imagination.”
If you’ve got young kitchen helpers at home who are interested in assisting over the holiday break, the recipe is simple enough that the whole family can make it together.
“We use this recipe for our programming for kids at the Calgary Learning Centre, and they love to get their hands dirty making it,” says Janice. “Kids and flour go together like basil and oregano.”

Gas Safety Tip

Never pour water onto a cooking oil fire! This will cause the fire to flare and spread. Instead, turn off the stove and put a lid on the pot to smother the flame. For more safety tips, visit atcogas.com.
