“I’m really into pie right now, particularly rhubarb because it’s coming up everywhere," says Janice, ATCO Blue Flame Kitchen Chef Instructor. "Two of my favourites are our Strawberry Rhubarb Pie and Saskatoon Rhubarb Pie. Berries are the first fresh fruit crop of the summer so I like to freeze my rhubarb and wait for the local, fresh strawberries and saskatoons to show up in stores. Both of these pies freeze well for a special occasion. Also, don’t be intimidated by making your own pastry. My favourite BFK recipes are the Food Processor Butter Pastry and the Foolproof Pastry because they are incredibly easy to make.

I’m also really enjoying making free-form pies or galettes, mini-pies, and hand-pies. I especially love decorating my pies with small cookie cutter cutouts and scraps of dough. Knowing when to stop is the most difficult part."
