Now that we’ve dug the garden, raked the leaves and dusted off the snow shovel for another year, baking is once again top of mind, both for gifting and enjoying at home. There’ll be months ahead when the outdoor rinks are frozen enough for skating, and local hills are snowy enough to ski. But right now, embrace the lull between fall and winter by getting ready for the whirlwind of December. Now is the time to start planning your holiday parties, baking and freezing treats ahead of time, and preparing gifts from the kitchen. It may seem like a lot of work now, but you’ll be thanking yourself a month from now.

Shortbread on Short Notice

Because you never know when a party will break out during the holiday season, it’s nice to have recipes that are perfect for entertaining, but that don’t take a ton of time and effort to put together. Shortbread is quick and easy to make, and in its most basic form – butter, sugar and flour – there’s a decent chance you already have the ingredients on hand to make it. To make things even easier, we have a YouTube tutorial video to accompany our Blue Cheese and Rosemary Shortbread recipe.


Quick Tip: Ladies and Gentlemen, Start Your Fruitcakes!

If you’re looking to make fruitcake for the holiday season, you should be thinking about it in November, not December. Some fruitcakes can take three weeks to ripen, while others can go for a good six weeks. The aging process gives the fruitcake a firm but moist texture, and the flavour evolves as the dried fruit, nuts and other ingredients intermingle. Chef's Choice

To battle the fall and winter chill, Chef Paul recommends this recipe for Beef Tenderloin Roast with Mushroom Sauce, which highlights the amazing Alberta-raised beef available to cooks in this province.

“What I particularly like about this recipe is the simple but delicious mushroom sauce, which has multiple layers of complex flavours that pair wonderfully with the tenderloin roast,” says Paul. “Is there any better way to use a whole beef tenderloin from our own backyard?”

Another benefit of roasting a whole tenderloin? “You can get a good 10 to 12 portions for your holiday party,” notes Paul.
