This foil-wrapped feta is a Greek favourite that is traditionally baked in the oven. Our version is done on the barbecue.

1 slice feta cheese, 1 inch (2.5 cm) thick
1/4 tsp (1 mL) oregano, crumbled
1/4 tsp (1 mL) red pepper flakes
1 tbsp (15 mL) olive oil
1 small lemon wedge

Place cheese in centre of a piece of heavy-duty foil. Sprinkle oregano and red pepper flakes over cheese. Drizzle oil over top. Bring edges of foil together to form a packet; close all edges with tight double folds.

Cook over medium heat on natural gas barbecue, turning packet over occasionally, until cheese is softened and heated through, about 10 minutes.

Place on a plate. Carefully unfold foil and roll up edges to form a serving dish. Squeeze lemon wedge over cheese. Serve with baguette slices. Serves 4.
