PIZZA SOUP
Pizza Soup
​2 tbsp (25 mL) extra-virgin olive oil
1 cup (250 mL) chopped onion
1 cup (250 mL) sliced mushrooms
4 cups (1 L) beef broth
1 can (28 oz/796 mL) diced tomatoes
2 1/2 cups (625 mL) thawed Freezer Ground Beef Base (click for recipe) 
     or 1 lb (0.5 kg) lean ground beef, cooked and drained
1 1/2 cups (375 mL) cubed pepperoni (1/2 inch/1.25 cm)
1 1/2 cups (375 mL) chopped green bell peppers
2 tbsp (25 mL) chopped fresh parsley
2 tsp (10 mL) Italian seasoning
Croutons*
Freshly grated Parmesan cheese*
1. Heat oil in a Dutch oven over medium heat. 
2. Add onion and mushrooms; sauté until vegetables are softened, about 5 minutes.
3. Add broth, tomatoes, Freezer Ground Beef Base, pepperoni, green peppers, parsley and Italian seasoning; stir to combine.  Bring to a boil. 
4. Reduce heat and simmer, uncovered, stirring occasionally, until green peppers are tender and soup is heated through, about 10 minutes. 
5. Serve topped with croutons and Parmesan cheese. Serves 6.
