2 cups (500 mL) long grain rice or jasmine rice
2 3/4 cups (675 mL) water
1 can (400 mL) coconut milk
1 tsp (5 mL) salt

Combine rice, water, coconut milk and salt in a large saucepan. Bring to a boil over medium heat. Reduce heat and simmer, covered, for 20 minutes or until liquid is absorbed and rice is tender. Serves 8.
