Fresh Pasta

Impress your family and friends by making your own fresh pasta from scratch. It’s easier than you may think and you don’t even need a pasta machine (though it makes the process go more smoothly). Serve this pasta with your favourite sauce or use it to make ravioli.

Ingredients

  • 4 large eggs
  • 1 tbsp water
  • 1 tsp olive oil
  • 2 cups all-purpose flour
  • 1 tsp salt
  • Flour, optional

Directions

  1. Whisk together eggs, water and oil until blended.
  2. Place 2 cups flour and salt in a food processor; process to combine. Add egg mixture and process, using an on/off motion, just until dough comes together, about 30 seconds.
  3. Turn dough out onto a floured surface. If dough is too sticky, gradually knead in additional flour. Gather dough into a ball; flatten into a disc shape. Wrap disc with plastic wrap and refrigerate for at least 30 minutes or up to 8 hours.
  4. Roll out using a pasta machine according to manufacturer’s instructions or roll out by hand.
