Ingredients

  • 2 tbsp red wine vinegar
  • 2 tbsp fresh lemon juice
  • 1 tbsp honey
  • 2 tsp Dijon mustard
  • 1/4 tsp freshly ground pepper
  • 1/8 tsp salt
  • 1/2 cup olive oil
  • 2 cups thinly sliced red onions
  • 12 cups torn mixed greens
  • 2 cups halved seedless red grapes
  • 1/2 cup crumbled blue cheese

Directions

  1. To prepare dressing, whisk together vinegar, lemon juice, honey, mustard, pepper and salt until combined. Gradually whisk in oil until blended. Pour dressing into a heavy zip-lock plastic bag. Add onions to bag and squeeze bag to coat onions with dressing; seal bag and place on a plate. Refrigerate, turning bag occasionally, for at least 4 hours or up to 8 hours.
  2. Remove onions from dressing; reserve dressing. Combine onions, greens and grapes in a bowl. Add dressing and toss to coat. Place salad on individual serving plates. Sprinkle each serving with cheese. Serve immediately.
