Waldorf Salad Shrimp

Traditionally, Waldorf Salad is a combination of celery, fruit and walnuts. For this version, we bulk it up with the addition of small shrimp.

Ingredients

  • 1/4 cup light sour cream
  • 1/4 cup mayonnaise
  • 2 tbsp fresh lemon juice
  • 1 tsp dill weed
  • 1/8 tsp nutmeg
  • 6 cups cubed red apples
  • 2 cups sliced celery
  • 1/4 cup chopped walnuts
  • 1 3/4 cups frozen cooked small shrimp, thawed, rinsed and patted dry

Directions

  1. To prepare dressing, whisk together sour cream, mayonnaise, lemon juice, dill weed and nutmeg until blended. Combine apples, celery, walnuts and shrimp in a bowl. Add dressing and toss to combine. Serve immediately.
