How to cut and juice a lime

To get the most juice out of a lime, start by pressing down on it and giving it a good roll on your work surface to soften some of the tissue on the inside. Slice the lime into three, instead of down across the middle. To do that, point the lime from tip to tail, line up the knife about a third of the way to one side of the lime, and slice off the side. Turn the lime around, and remove a similar sized slice off the other side. With your knife, pierce the centre of the lime to get more juice out. There’s no pith down the centre to hold everything together, so a simple squeeze is all it takes to release the juice. For the middle piece, a little twist helps to coax all the juice out.
