ALMOND BAKED SALMON WITH DOUBLE MUSTARD SAUCE

A rich mayonnaise sauce gives this easy breaded salmon a luxurious taste. Serve with our delectable Double Mustard Sauce, which uses both Dijon mustard and mustard seeds.

ALMOND BAKED SALMON WITH DOUBLE MUSTARD SAUCE

Ingredients

  • 1/2 cup mayonnaise
  • 1/4 cup Dijon mustard
  • 1 tbsp packed golden brown sugar
  • 1/2 tsp dill weed
  • 1 cup soft fresh bread crumbs
  • 1/4 cup chopped fresh parsley
  • 1/4 cup coarsely chopped sliced almonds
  • 2 tbsp salted butter, melted
  • 1/4 tsp freshly ground pepper
  • 3 1/2 lb (1.75 kg) salmon fillet
  • Double Mustard Sauce*

Directions

  1. Preheat oven to 425°F.
  2. Combine mayonnaise, mustard, brown sugar and dill weed. In a separate bowl, combine bread crumbs, parsley, almonds, melted butter and pepper.
  3. Place salmon, skin side down, in a parchment paper-lined rimmed baking sheet. Spread mayonnaise mixture evenly over top of salmon. Pat bread crumb mixture on top.
  4. Bake until fish flakes easily with a fork, about 40 - 45 minutes. Using parchment paper as an aid, carefully slide salmon onto a serving platter. Serve with Double Mustard Sauce.

DOUBLE MUSTARD SAUCE

Ingredients

  • 1/2 cup dry white wine
  • 1/4 cup finely chopped green onion
  • 1 tbsp mustard seeds
  • 1 cup whipping cream
  • 2 tbsp Dijon mustard
  • 1/2 tsp tarragon, crumbled
  • 1/4 tsp salt

Yield: Makes about 1 cup.

Directions

  1. Combine wine, green onion and mustard seeds in a medium saucepan. Bring to a boil over medium heat.
  2. Boil, uncovered, stirring occasionally, until mixture is reduced by half, about 5 minutes. Stir in cream, mustard, tarragon and salt. Bring to a boil.
  3. Boil, stirring frequently, until thickened, about 5 - 7 minutes. Serve warm.
