ALMOND COOKIE BRITTLE

Thin and crispy like a brittle, but buttery and crumbly like a cookie, this baked treat is bound to become your new favourite snack.

ALMOND COOKIE BRITTLE

Ingredients

  • 3/4 cup salted butter, softened
  • 3/4 cup granulated sugar
  • 2 tsp vanilla
  • 1 1/2 cups all-purpose flour
  • 2 tsp grated lemon peel
  • 1/2 cup coarsely chopped toasted sliced almonds

Directions

  1. Preheat oven to 350°F.
  2. Using medium speed of an electric mixer, beat together butter and sugar until fluffy. Beat in vanilla. Stir in flour and lemon peel. Fold in almonds. Press mixture into lightly greased 9x13 inch foil-lined baking pan.
  3. Bake until light golden brown, about 20 - 25 minutes. Cool in pan on a rack. Break into chunks. May be frozen for up to 2 months.
