Apple Cider-Glazed Salmon

Apple Cider-Glazed Salmon

Ingredients

  • 1/2 cup apple cider vinegar
  • 1/2 cup liquid honey
  • 3 tbsp Dijon mustard
  • 1 tsp ground coriander
  • 1/2 tsp freshly ground pepper
  • 1/8 tsp cayenne pepper
  • 2 tbsp cornstarch
  • 2 lb (1 kg) Atlantic salmon fillet with skin
  • 3 green onions, sliced
  • 1 lime, cut into wedges, optional*

Directions

  1. Preheat oven to 400°F.
  2. To prepare glaze, combine vinegar, honey, mustard, coriander, pepper and cayenne pepper in a small saucepan. Bring mixture to a boil over medium-high heat.
  3. Reduce heat and simmer, stirring occasionally, until glaze is reduced by half, about 12 – 14 minutes. Reserve 1/4 cup glaze for serving; set aside remaining glaze to baste salmon.
  4. Pat salmon dry with paper towels. Sprinkle cornstarch over salmon. Pat gently to adhere, shaking off excess.
  5. Line a large rimmed baking sheet with foil. Place a greased rack on top. Place salmon on rack, skin side down. Brush salmon with some of remaining glaze.
  6. Bake until salmon is just becoming opaque, about 7 – 10 minutes. Remove salmon from oven and brush salmon with some remaining glaze.
  7. Preheat broiler to high heat setting. Broil salmon 7 – 8 inches from heat, brushing salmon every 5 minutes with remaining glaze, until salmon flakes easily with a fork, about 17 – 20 minutes.
  8. Let stand for 5 minutes. Transfer to a serving platter. Drizzle with reserved glaze. Sprinkle with green onions and serve with lime wedges.
