APRICOT-GLAZED CARROTS

Turn your carrots into an elegant dinner party worthy side dish by glazing them in a reduction of apricot jam, ginger and balsamic vinegar.

APRICOT-GLAZED CARROTS

Ingredients

  • 8 cups baby carrots
  • 2 tbsp salted butter
  • 1 green onion, thinly sliced
  • 1 tbsp grated fresh ginger
  • 1/3 cup apricot jam, sieved
  • 1 tbsp balsamic vinegar
  • 1/4 tsp salt
  • Dash cayenne pepper

Directions

  1. Cook carrots in boiling water just until tender, about 8 - 10 minutes. Drain and keep warm.
  2. Meanwhile, melt butter in a frypan. Stir in onion and ginger; cook 1 minute. Add jam, vinegar, salt and cayenne pepper and simmer until slightly thickened. Add carrots and cook until carrots are glazed, about 2 - 3 minutes.
