ASPARAGUS WITH GREMOLATA BUTTER

Gremolata is a blend of parsley, lemon and garlic. Combined with butter, it makes the perfect dressing for a steamed asparagus side dish.

ASPARAGUS WITH GREMOLATA BUTTER

Ingredients

  • 2 lb asparagus, trimmed
  • 2 tbsp salted butter
  • 2 tbsp chopped fresh parsley
  • 2 tsp grated lemon peel
  • 1 clove garlic, finely chopped
  • 2 tbsp fresh lemon juice

Directions

  1. Steam asparagus just until tender crisp, about 4 minutes; drain. Cool immediately in ice water; drain. Asparagus may be prepared to this point, wrapped in paper towels and refrigerated for up to 24 hours.
  2. Melt butter in a large frypan over medium heat. Stir in parsley, lemon peel and garlic; sauté for 1 minute. Add asparagus and sauté until heated through, about 3 minutes. Stir in lemon juice to coat. Serve immediately.
