ATHENIAN GREEN SALAD

Give your Greek salad ingredients a lift with a zesty yogurt buttermilk dressing flavoured with dill and fresh mint.

ATHENIAN GREEN SALAD

Ingredients

  • 3/4 cup yogurt
  • 1/4 cup buttermilk
  • 1 tbsp fresh lemon juice
  • 1/2 tsp mint, crumbled
  • 1/2 tsp salt
  • 1/4 tsp freshly ground pepper
  • 1/4 tsp dill weed
  • 1 clove garlic, crushed
  • 8 cups torn romaine lettuce
  • 2 cups shredded red cabbage
  • 1 cup sliced cucumber
  • 3/4 cup diced red bell pepper
  • 1/2 cup sliced green onions
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tomato, cut into thin wedges

Directions

  1. To prepare dressing, whisk together yogurt, buttermilk, lemon juice, mint, salt pepper, dill and garlic until blended. Dressing may be refrigerated for up to 24 hours.
  2. Combine remaining ingredients in a bowl. Toss with dressing to coat. Serve immediately.
