BACKYARD CLAMS OR MUSSELS

This recipe works equally well for clams or mussels boiled right on your backyard grill. The buttery wine sauce can be sopped up with a hunk of crusty baguette.

Yield: Serve 4.

BACKYARD CLAMS OR MUSSELS

Ingredients

  • 6 cloves garlic, finely chopped
  • 6 thin slices lemon
  • 1/4 cup salted butter, melted
  • 1/3 cup dry white wine
  • 1/4 cup water
  • 1/2 tsp salt
  • 4 dozen clams or mussels, rinsed and scrubbed
  • Baguette slices*

Directions

  1. Preheat natural gas barbecue on medium heat for 10 - 15 minutes.
  2. Combine garlic, lemon, butter, wine, water and salt in a large foil pan. Add clams or mussels. Cover tightly with foil.
  3. Place pan on grid. Bring to a boil and cook until clams or mussels open, about 10 minutes. Discard any unopened clams or mussels. Ladle into bowls along with pan juices. Serve with baguette slices for dipping.
