BALSAMIC BAKED TOMATOES

Baked tomatoes topped with crispy breadcrumbs are an elegant side dish to serve with grilled or roasted meat or fish. These tomatoes are drizzled with balsamic vinegar, which intensifies the flavour.

BALSAMIC BAKED TOMATOES

Ingredients

  • 1 cup fresh bread crumbs
  • 2 tbsp olive oil
  • 1 clove garlic, crushed
  • 1 tsp thyme, crumbled
  • 1/2 tsp salt
  • 1/4 tsp freshly ground pepper
  • 8 Roma tomatoes, quartered lengthwise
  • 1 tbsp balsamic vinegar

Directions

  1. Preheat oven to 350°F.
  2. Combine bread crumbs, oil, garlic, thyme, salt and pepper; set aside. Arrange tomatoes in a single layer in a greased shallow baking dish. Drizzle vinegar over tomatoes. Sprinkle with bread crumb mixture.
  3. Bake until tomatoes are tender and topping is crisp and lightly browned, about 30 - 35 minutes.
