BASIC PEANUT BUTTER COOKIES

Classic peanut butter cookies with just three ingredients? It’s true: all you need for these childhood favourites is peanut butter, sugar and an egg. Don’t forget to do the classic crisscross pattern on top — it’s not a peanut butter cookie without it!

BASIC PEANUT BUTTER COOKIES

Ingredients

  • 1 1/2 cups smooth or crunchy peanut butter
  • 1 cup granulated sugar
  • 1 large egg

Directions

  1. Preheat oven to 350°F.
  2. Using medium speed of an electric mixer, beat together peanut butter, sugar and egg until well blended. Shape dough into 1 1/2 inch balls. Place balls 2 inches apart on parchment paper-lined cookie sheets. Using a fork dipped in sugar, flatten each ball in a criss-cross pattern.
  3. Bake until cookies are golden, about 15 - 20 minutes. Let cookies stand for 5 minutes on cookie sheets. Remove from cookie sheets and cool on racks. May be frozen for up to 2 months.
