BASIL MASHED POTATOES
A little bit of crumbled basil can lend a lot of flavour to mashed potatoes. Adding some yogurt in with the milk and butter gives this dinner side dish some extra tang.

- 6 cups cubed peeled baking potatoes
- 1/4 cup milk (2%)
- 1/4 cup yogurt
- 1 tbsp salted butter
- 1 1/2 tsp basil, crumbled
- 1/2 tsp salt
- 1/4 tsp white pepper
- Cook potatoes in boiling salted water until tender; drain.
- Add remaining ingredients. Using medium speed of an electric mixer, beat mixture for 1 minute or until smooth. Do not overbeat.
