BASIL MASHED POTATOES

A little bit of crumbled basil can lend a lot of flavour to mashed potatoes. Adding some yogurt in with the milk and butter gives this dinner side dish some extra tang.

Yield: Serves 6.

BASIL MASHED POTATOES

Ingredients

  • 6 cups cubed peeled baking potatoes
  • 1/4 cup milk (2%)
  • 1/4 cup yogurt
  • 1 tbsp salted butter
  • 1 1/2 tsp basil, crumbled
  • 1/2 tsp salt
  • 1/4 tsp white pepper

Directions

  1. Cook potatoes in boiling salted water until tender; drain.
  2. Add remaining ingredients. Using medium speed of an electric mixer, beat mixture for 1 minute or until smooth. Do not overbeat.
