BEER AND CHEDDAR CORNBREAD

Beer adds a nice flavour to this cheesy cornbread recipe. Serve it alongside your favourite barbecue dishes.

Yield: Serves 6 - 8.

BEER AND CHEDDAR CORNBREAD

Ingredients

  • 1 cup flour
  • 3/4 cup cornmeal
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup beer
  • 1/2 cup water
  • 1/4 cup butter, melted
  • 2 eggs
  • 2 tbsp honey
  • 1/2 tsp hot pepper sauce
  • 1/3 cup shredded cheddar cheese

Directions

  1. Combine flour, cornmeal, baking powder and salt in a bowl. Stir in 1/2 cup cheese.
  2. Whisk together next 6 ingredients (beer through hot pepper sauce) until blended.
  3. Add beer mixture to flour mixture and stir just until combined.
  4. Spoon batter into a greased 9 inch square baking pan. Sprinkle cheese over top.
  5. Bake at 400ºF for 20 minutes or until a cake tester inserted in centre comes out clean. Serve warm.
