BIRCHERMUESLI

Birchermuesli was originally invented by a Swiss doctor looking for a wholesome food to serve to hospital patients. A combination of oats, yogurt, nuts and dried fruit, this muesli is a light and healthy breakfast.

BIRCHERMUESLI

Ingredients

  • 1 cup quick-cooking rolled oats
  • 1 cup vanilla yogurt, divided
  • 1 cup chopped dried mixed fruit (cranberries, apricots, raisins and prunes)
  • 1/2 cup sliced natural almonds, toasted
  • 3 tbsp honey
  • 1 tbsp lemon juice
  • 1/4 tsp cinnamon
  • Additional vanilla yogurt, optional

Directions

  1. Combine rolled oats and 1/2 cup yogurt. Stir in dried fruit, almonds, honey, lemon juice and cinnamon. Cover and chill at least 1 hour or for up to 4 hours.
  2. Stir in remaining 1/2 cup yogurt. Spoon into serving dishes. Top with a dollop of vanilla yogurt.
