BISON BURGERS WITH MAPLE SHALLOTS

Bison is leaner than beef, but the cheese and mustard mixed right in with the meat makes this grilled burger nice and juicy. The sweetness from our sautéed Maple Shallots complements the bison nicely.

Yield: Makes 6.

BISON BURGERS WITH MAPLE SHALLOTS

Ingredients

  • 2 lb (1 kg) lean ground bison
  • 3/4 cup shredded white cheddar cheese
  • 1 tbsp Dijon mustard
  • 1 clove garlic, finely chopped
  • 1 tsp salt
  • 1 tsp freshly ground pepper
  • 6 hamburger buns
  • Maple Shallots*

Directions

  1. Preheat natural gas barbecue on medium heat for 10 - 15 minutes.
  2. Meanwhile, combine bison, cheese, mustard, garlic, salt and pepper. Shape mixture into 6 patties.
  3. Grill patties over medium heat on natural gas barbecue until completely cooked.
  4. Serve in buns with Maple Shallots.

MAPLE SHALLOTS

Ingredients

  • ​1 tsp canola oil
  • 4 cups sliced shallots
  • 2 tbsp salted butter
  • 1 tbsp maple syrup
  • 1/4 tsp salt

Yield: Makes 2 cup.

Directions

  1. Heat oil in a large non-stick frypan over medium heat.
  2. Add shallots and cook, uncovered, stirring occasionally, until golden brown, about 8 - 10 minutes.
  3. Remove from heat and stir in butter, maple syrup and salt, stirring until butter is melted.
