Blackberry and Rosemary Clafoutis

Clafoutis is a baked dessert of French origin that is made with fruit, usually cherries, and batter.

Yield: Serves 8

Blackberry and Rosemary Clafoutis

Ingredients

  • 2/3 cup milk (2%)
  • 2 large eggs
  • 1/3 cup all-purpose flour
  • 3 tbsp granulated sugar
  • 1/2 tsp almond extract
  • 1/8 tsp salt
  • 1 cup blackberries
  • 2 tbsp granulated sugar
  • 1 tsp finely chopped fresh rosemary
  • Whipped cream*

Directions

  1. Preheat oven to 400°F.
  2. To prepare batter, place milk, eggs, flour, 3 tbsp sugar, almond extract and salt in a blender; blend until smooth.
  3. Pour batter into a greased 8 inch round baking pan. Place blackberries on top of batter. Sprinkle 2 tbsp sugar and rosemary over batter.
  4. Bake until puffed and light golden, about 35 minutes.
  5. Let stand for 15 minutes before slicing.
  6. Serve warm with a dollop of whipped cream.
