BLUE CHEESE AND APPLE SALAD

Tangy blue cheese and crisp apples are a classic combination. This side salad makes the most of both, along with mixed greens, walnuts and a maple dressing.

BLUE CHEESE AND APPLE SALAD

Ingredients

  • 1/4 cup maple-flavoured pancake syrup
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp freshly ground pepper
  • 2 tbsp canola oil
  • 8 cups torn mixed greens
  • 2 red apples, thinly sliced
  • 1/2 cup crumbled blue cheese
  • 1/4 cup chopped toasted walnuts

Directions

  1. To prepare dressing, whisk together syrup, lemon juice, mustard, salt and pepper until combined. Gradually whisk in oil until blended.
  2. Combine greens, apples, cheese and walnuts in a bowl. Add dressing and toss to coat. Serve immediately.
