BLUE CHEESE STUFFED DATES

The rich saltiness of blue cheese pairs perfectly with sticky sweet dates. Wrapped in a thin layer of prosciutto, these classy appetizers are guaranteed to wow at your next dinner party.

BLUE CHEESE STUFFED DATES

Ingredients

  • 5 oz (150 g) blue cheese
  • 24 pitted whole Medjool dates
  • 24 pickled jalapeno pepper slices
  • 12 slices prosciutto, halved lengthwise
  • 2 tsp extra-virgin olive oil

Directions

  1. Preheat oven to 375°F.
  2. Cut cheese into 24 cubes. Slit each date lengthwise, being careful not to cut in half. Open each date slightly and put in 1 cube of cheese and 1 jalapeno pepper slice. Place 1 filled date on one end of each half slice of prosciutto. Roll up prosciutto slices, jelly-roll fashion, enclosing filled date.
  3. Place wrapped dates, seam side down, in a single layer in a parchment paper-lined rimmed baking sheet. Brush tops with oil. Bake until dates are warmed and cheese is softened, about 10 - 12 minutes. Serve warm.
