BROCCOLI WITH BREAD CRUMB GREMOLATA

Gremolata is an Italian condiment made of herbs and lemon that often is combined with breadcrumbs for extra crunch. We love sprinkling it on sautéed broccolini for an easy side dish.

Yield: Serves 6.

BROCCOLI WITH BREAD CRUMB GREMOLATA

Ingredients

  • 6 cups broccoli spears
  • 2 tbsp salted butter
  • Bread Crumb Gremolata

Directions

  1. Cook broccoli in boiling water just until tender crisp, about 4 minutes. Drain and cool immediately in ice water. Drain. Broccoli may be prepared to this point and refrigerated for up to 8 hours.
  2. Melt butter in frypan. Add broccoli and sauté until heated through, about 2 minutes.
  3. Toss broccoli with Bread Crumb Gremolata and serve immediately.

BREAD CRUMB GREMOLATA

Ingredients

  • 1 tbsp grated lemon peel
  • 1 clove garlic, minced
  • 1/4 cup salted butter
  • 1 1/2 cups fresh bread crumbs
  • 2 tbsp chopped fresh parsley

Yield: Makes about 1 1/2 cups.

Directions

  1. In a frypan, sauté lemon peel and garlic in butter for 1 minute.
  2. Stir in bread crumbs and cook, stirring until golden, about 3 minutes. Stir in parsley.
