BROCCOLI AND PEPPER STIR FRY

Stir-frying vegetables keeps them bright, crisp and low in fat. This quick side dish is full of tangy Asian-inspired flavour.

Yield: Serves 4.

BROCCOLI AND PEPPER STIR FRY

Ingredients

  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar or white wine vinegar
  • 1 tsp granulated sugar
  • 1/2 tsp sesame oil
  • 1/2 tsp grated fresh ginger
  • 1 clove garlic, crushed
  • 1 tbsp canola oil
  • 3 cups broccoli florets
  • 1 cup thinly sliced red bell pepper

Directions

  1. Whisk together soy sauce, vinegar, sugar, sesame oil, ginger and garlic until blended; set aside.
  2. Heat oil in a wok or frypan over medium heat. Add broccoli and red pepper; stir-fry until tender crisp, about 4 - 5 minutes.
  3. Add soy sauce mixture and toss to combine. Stir-fry for 1 - 2 minutes.
