CARAMELIZED ONION AND GOAT CHEESE PIZZA

Take your time caramelizing the onions for this pizza — you’re looking to slowly brown the onion’s sugars, not the onions themselves. You’ll end up with sweet and jammy onions, which pair beautifully with tangy goat cheese.

CARAMELIZED ONION AND GOAT CHEESE PIZZA

Ingredients

  • 1 tbsp salted butter
  • 1 tbsp canola oil
  • 2 cups thinly sliced onions
  • 1 tsp basil, crumbled
  • 1 baked pizza crust
  • 1/2 cup pizza sauce or tomato-based pasta sauce
  • 1 log (150 g) soft goat cheese, crumbled
  • Freshly ground pepper*

Directions

  1. Preheat oven to 450°F.
  2. Melt butter with oil in a frypan over medium heat. Add onions and reduce heat to low; cook, stirring occasionally, until light brown, about 25 - 30 minutes. Stir in basil.
  3. Place pizza crust on an ungreased cookie sheet or pizza pan. Spread pizza sauce evenly over pizza crust. Top with onions and cheese. Sprinkle with pepper.
  4. Bake until cheese is melted, about 12 - 15 minutes. Slice and serve.
