This scalloped potato-esque side dish is topped with a cheesy breadcrumb crust. We like baking it right on the barbecue.

Yield: Serves 6.



  • 1/3 cup thinly sliced green onion
  • 1/2 cup salted butter
  • 6 large potatoes, peeled and sliced
  • 3/4 tsp salt
  • 3/4 tsp pepper
  • 2 cups shredded cheddar cheese
  • 2 cups bread crumbs
  • 2 tbsp chopped fresh parsley
  • 1/8 tsp cayenne pepper


  1. Preheat natural gas barbecue on medium heat for 10 - 15 minutes.
  2. In a medium frypan, sauté onion in butter until softened, about 2 minutes.
  3. Arrange potato slices in overlapping rows in a greased shallow baking pan.
  4. Pour onion mixture over top. Sprinkle with salt and pepper.
  5. Bake over medium heat on natural gas barbecue for 20 minutes.
  6. Combine remaining ingredients and sprinkle over potatoes. Return to barbecue and bake until topping is browned and bubbly and potatoes are tender, about 20 minutes.
