Cheesy Mashed Potatoes for Two
We added a southwestern flair to these quick and delicious side potatoes by adding Monterey Jack cheese with jalapeno pepper.
Storage time: Up to 3 days in the refrigerator.

 Cheesy Mashed Potatoes for Two 
            Ingredients
- 3 medium baking potatoes, peeled and cubed
 - 1 tbsp salted butter
 - 2 tbsp hot milk (2 %)
 - 1/4 tsp salt
 - 1/2 cup shredded Monterey Jack cheese with jalapeno
 - 1 tbsp chopped green onion
 
Directions
- In a medium saucepan, cover potatoes with water and bring to a boil. Reduce heat and simmer, covered, until tender, about 15 minutes.
 - Drain. Mash potatoes with butter, milk and salt. Fold in cheese and onion.
