Cheesy Mashed Potatoes for Two

 

We added a southwestern flair to these quick and delicious side potatoes by adding Monterey Jack cheese with jalapeno pepper.  

Storage time: Up to 3 days in the refrigerator.

Cheesy Mashed Potatoes for Two

Ingredients

  • 3 medium baking potatoes, peeled and cubed
  • 1 tbsp salted butter
  • 2 tbsp hot milk (2 %)
  • 1/4 tsp salt
  • 1/2 cup shredded Monterey Jack cheese with jalapeno
  • 1 tbsp chopped green onion

Directions

  1. In a medium saucepan, cover potatoes with water and bring to a boil. Reduce heat and simmer, covered, until tender, about 15 minutes.
  2. Drain. Mash potatoes with butter, milk and salt. Fold in cheese and onion.
